I will eat hummus in any way it is offered to me, on a carrot, by the spoonful, on a cracker- I can’t get enough. Top that hummus with four additional layers of healthy treats and I will be a very happy camper. So, after getting the chance to visit my favorite, local hummus (and guac!) company, Hope Foods, up near Boulder, Colorado courtesy of Sprouts Farmers Market, I decided to do just that.
But before we get into the recipe, a little bit more about Hope. When it comes to Hope, hummus isn’t just hummus- seriously, they have a chocolate flavor that is to die for- it is really an art form. They pride themselves on quality ingredients and built their company from the ground up- a group of friends making hummus in their kitchen grew into a company that pairs a laid-back feel with a luxury taste- a taste that is certified organic and gluten free to boot! Now, talking about art their new Lemon Peppercorn flavor, exclusively available at Sprouts, is just that that- fine art perfection. Citrus paired with the spice of black pepper is a perfect base for a 5 Layer Mediterranean Dip!
5 Layer Mediterranean Dip
Ingredients
8 Ounces Hummus (I used one tub of the Lemon Peppercorn)
1 Cup Greek Yogurt
1 Cup Diced Tomatoes
1 Cup Diced Cucumber
1/2 Cup Artichoke Hearts, Roughly Chopped
1/2 Cup Kalamata Olives
1/2 Cup Feta Cheese Crumbles
1/4 Cup Parsley, Coarsely Chopped
1 Teaspoon Thyme
1 Teaspoon Paprika
Drizzle of Olive Oil (this one is Greek)
Salt and Pepper to Taste
Instructions:
Layer One: Spread your hummus in a thick layer in the bottom of your serving bowl.
Layer Two: Throughly mix olives and artichokes together and spread on top of hummus layer.
Layer Three: Gently spread Greek yogurt over olive mixture. Sprinkle with paprika and thyme to taste.
Layer Four: Mix together chopped tomatoes and cucumber, then spread over yogurt layer.
Layer Five: Top with a mixture of feta and parsley. Add salt and pepper to taste, and then drizzle a bit of olive oil over the top to bring everything together!
Serve chilled with your favorite serving ‘utensil’ I used Kashi’s new line of thins!
