Preserving Dandelions 🌸 Dandelion petals, lea Preserving Dandelions 🌸 Dandelion petals, leaves, and roots are all edible! You can actually buy bundles of leaves at the grocery store for salads, but dandelion jelly is a wonderful treat to make at home! *** Please ONLY use dandelions that you are 100% positive have not been sprayed with pesticides, have been kept away from dogs, etc etc. I harvested these from my own yard, grown specifically for this purpose.*** Dandelion Jelly 2 Cups Dandelion Petals (about 4-5 cups blossoms) 2.5 Cups Boiling Water 2 Cups Sugar 2 Tbs Lemon Juice 1 Oz Powdered Pectin Zest of One Lemon To remove the petals from the dandelion take the base between your pointer and thumb and roll between your fingers with pressure. This should loosen the petals and you can easily pull them out. Pour boiling water over the petals and let this steep overnight or up to 24 hours for a stronger tea (and stronger tasting jelly!) Strain the petals, using a spatula to press out all the liquid, and add the tea liquid into a pot on medium-high heat. Add the lemon juice and pectin and bring to a boil. Reduce the heat to medium low, add in the sugar and zest, and stir to dissolve. Let simmer for 10-15 minutes or until the yellow has turned golden and the jelly thickens. This should make about 2 pints of jelly. Store in the fridge for up to a month. Can be waterbath canned, process for 10 minutes. Dehydrated Dandelion Root Pull up dandelion plants with their roots as intact as possible. Snip the roots off the plant and wash until dirt stops coming off. Let soak in clean water until the outer layer of the root peels off easily. Chop the skinned roots, tossing any with black areas inside the root into the trash, and dehydrate for 8-12 hours at 110°. Let’s make lilac lemonade! 🍋🪻 🪻Lilac S Let’s make lilac lemonade! 🍋🪻 🪻Lilac Simple Syrup: Combine 1.5 cups lilac blossoms, 1 cup honey (can be subbed for granulated sugar,) and 1 cup water. Bring to a simmer for 5-10 minutes or until honey has turned a rich brown. Strain the flowers and let completely cool before using! The simple syrup can store in the fridge for 7-10 days or be frozen for about 3 months. 🍋 Lilac Lemonade: Combine 2 cups lemon juice, 1.5 cups lilac simple syrup, and 6 cups of water. Combine well and serve over ice!
