I am a pizza lover in every way shape and form (well, with the exception of anchovies, because no thanks.) So when I was invited by the lovely people at Sprouts Farmers Market to head to a pizza cooking class at Cook Street School of Culinary Arts I was beyond excited. The teachers were great, the food was amazing- I mean seriously, we got to make our own mozzarella from scratch- overall I had an amazing time! Aside from our pizzas, we also had a delicious grilled pineapple salad and that grilled pineapple stuck with me. I’ve made broiled pineapple on the blog, but I couldn’t get grilled pineapple pizza out of my head. So after a zillion recipe tests because I am a sucker for texture. Grilled Pineapple Dessert Pizza happened. And it is fabulous.
This isn’t the healthiest recipe you’ll find on MHH but oh is it so perfect for when your sweet tooth is acting up! I’ve added cinnamon into the actual pizza dough and swapped out the traditional olive oil for a dessert-friendly coconut oil, so everything about this pizza pie will make your belly a very happy camper.
Crust Ingredients:
2 ½ Cups Flour
2 Tablespoons Coconut Oil
2 Teaspoons Cinnamon
1 Packet Active Dry Yeast
1 Teaspoon Sugar
1 Cup Warm Water
1 Teaspoon Salt
For the Topping:
1/4 Cup Brown Sugar
2 Teaspoons Cinnamon
2 Teaspoons Melted Butter
Grilled Pineapple Slices
Shredded Mint Leaves
Optional: Chocolate Chips for Drizzle
Instructions for the Grilled Pineapple Dessert Pizza
Start out with the crust because it takes a bit of a wait to have everything rise beautifully!
1. Add the packet of active dry yeast to a cup of warm water with a teaspoon of sugar and wait until foamy. This can take 5-10 minutes.
2. Once the yeast is active, add your flour, two teaspoons of cinnamon, 2 tablespoons of coconut oil, and a teaspoon of salt and knead well. The dough will be streaked with cinnamon and slightly sticky from the coconut oil.
3. Cover the dough with a clean dishtowel and let sit for 30 minutes.
4. Preheat your oven to 450 degrees, and preheat a grill or grill pan to a high heat.
Let’s prep the toppings!
5. Mix your tablespoon of cinnamon into your half cup of brown sugar.
6. Shred your mint leaves.
7. Cut your pineapple into whatever sized slices feel good to you! I like mine a bit larger because they are easier to grill.
8. After your dough has risen, flour your work surface and roll out your dough to shape and poke a few holes to allow air to escape.
9. Pop into your preheated oven for about 15 minutes, or until it starts to brown. (Tip: if your pizza stone or tray makes your pizza stick add some corn meal before placing the dough on it!)
10. Pop your pineapple slices directly onto a grill pan or grill for 2-3 minutes each side until warmed through or grill marks appear. I learned at Cook Street that you’ll know when they’re ready because the pineapple stops sticking! (No grill? No worries! Pop the pineapple in the oven on a parchment paper lined sheet until warm and soft.)
11. When the pizza dough comes out for the first time (don’t worry if it is not completely done yet) brush your melted butter across the surface.
12. Sprinkle with brown sugar mixture, mint, and pineapple slices. If you’re going for color, save some of the mint leaves to garnish afterward!
13. Place the pizza back into the oven for another 5 minutes until dough is cooked through and sugar is melted!
14. Let cool for 5-10 minutes before slicing, drizzle with chocolate if desires, and enjoy!
