Let’s make lavender lemonade! 🍋🪻 🪻Lave Let’s make lavender lemonade! 🍋🪻

🪻Lavender Simple Syrup:

Combine 1/4 cup lavender flowers and 1 cup water. Bring to a boil, remove from heat, add on a lid, and let steep for about ten minutes. Strain the flowers, mix in honey while the water is still hot and stir until well combined. Let completely cool before using! The simple syrup can store in the fridge for 7-10 days or be frozen for about 3 months. 

🍋 Lavender Lemonade:

Combine 2 cups lemon juice, 1.5 cups lavender simple syrup, and 6 cups of water. Combine well and serve over ice!

Don’t forget to save the lemon peels to make garnishes or seasoning later!

Zucchini Meatballs! Full of flavor and nutrients, Zucchini Meatballs! Full of flavor and nutrients, I love these versatile pops of protein!

Ingredients:
1 Pound Ground Beef
1.5 Cups Zucchini, Shredded
1/2 Cup Bread Crumbs
1/2 Cup Onion, Finely Chopped
1/4 Cup Parsley, Minced
Two Eggs
Salt and Pepper, To Taste (I used about a Tsp each)

The process is simple. Combine one pound of ground beef, one and a half cups zucchini shreds, 1/2 cup of bread crumbs, 1/2 cup finely chopped onion, 1/4 minced parsley, two eggs, and salt and pepper, to taste. Combine and roll two inch balls in your hands arranging on a lined baking sheet. Pop in a 425° oven for 20 minutes, and enjoy! 

These also freeze and reheat well, so they’re great to make in big batches using whatever veggies you have on hand. Swapping the zucchini for sweet peppers is another favorite of mine!
