Pickled Spring Veggies! 🥕 🥒 🧄 Recipe pe Pickled Spring Veggies! 🥕 🥒 🧄 

Recipe per quart jar: (I made two quarts)

2 Cups Julienned Spring Vegetables
1 Cup White Vinegar
1 Cup Water
2 Tbs Salt
1 Tsp Sugar
1 Tsp Black Peppercorns
1/2 Tsp Celery Seed
2-3 Sprigs of Thyme
1 Bay Leaf
4 Cloves Garlic

🫙 For the brine combine water, vinegar, salt, and sugar. Bring to a boil and reduce heat to simmer until all solids are dissolved. 

🥕 Pack all remaining spices, herbs, and veggie matchsticks into a quart sized jar. Leave space at the neck to make sure the veggies will not touch the lid. Pour the hot brine over the veggies and close the lid. Veggies will be ready in about 24 hours. Store in the fridge- the pickles will be best if consumed in the first month.

1. Knowing when to prune! 

🌱 I like to remove ‘suckers’ from tomato plants while the plant is still getting established! Suckers are the small offshoots that pop up between the steam of the plant and leaves- they’re called ‘suckers’ because they ‘suck the life’ out of the tomato plant! They do produce fruit later on, so you *can* leave them after your plant is established if you like!

🌱 Topping plants is a great way for you to force the plant to become more bushy! You just snip the top of the plant off over the last set of leaves. I do this while my pepper plants are getting established as well as while harvesting basil so I yield more and more throughout the season!

2. Adjusting water based on need. 

💧 Watering on a schedule is great. I choose to water early in the morning and in the late evening to give the water the best chance of soaking in and not evaporating. But the amount of water and frequency will depend on temperature and rainfall! If you see plants wilting like the squash in the video, you might want to try adding some more water to combat heat!

3. Preventative measures are key! Two of my favorite products from @otoolesgardencenters are Neem Oil and BT. Both have many uses throughout the season! Neem helps with pests and powdery mildew that can affect your plants’ foliage and BT is great for more substantial pests like worms! 

No garden is perfect, but you can definitely help your garden to flourish with some knowledge and patience!

Oh, rhubarb, I adore you! I feel like many people Oh, rhubarb, I adore you! I feel like many people assume that rhubarb is a one trick pony- the quintessential rhubarb tart for spring, but I LOVE how versatile it is! It is one of my favorite seasonal flavors. 

Rhubarb Syrup:

4 Cups Rhubarb, chopped
1 Cup Sugar
1 Cup Water

Add all ingredients into a saucepan and bring to a boil, then lower heat to a simmer for about 30 minutes or until the syrup has started to thicken. Strain the rhubarb through a fine mesh sieve and let cool completely before use! 

For this quick spring sip, I added about a half an ounce of rhubarb syrup into an iced glass, added a sprig of thyme and topped with sparkling water! But there are so many fun flavor combinations!
