Red Pepper Pasta

2.5 Cups Flour (I use a combination of 00 and Semolina from @bobsredmill)
3 Eggs
50g Red Pepper Purée (check two posts back!)
Large Pinch Salt

Combine eggs and pepper purée in a food processor until well combined. Combine flours and salt in a mound. Use your hand to create a well in the mound and pour in egg mixture. Use a fork to combine until it makes a shaggy dough then hand-knead for about ten minutes until pasta is silky smooth. Let rest for a minimum of 30 minutes but up to overnight.

Roll out your dough and create shapes. Cook for 2-5 minutes or freeze.

2 Cups (One Can) Chickpeas
½ Cup Tahini
¼ Cup Roasted Red Pepper Purée (plus extra for garnish)
2 Tbs Olive Oil
2 Garlic Cloves
½ Tsp Sumac (If you don’t have this on hand, the recipe is great without it, but sumac adds beautiful dimension and flavor!)
Salt and Pepper, to Taste

Combine everything in a food processor until smooth!

Roasted Red Pepper Purée! Comment ‘Red Pepper’ for Roasted Red Pepper Purée! Comment ‘Red Pepper’ for the full savable method and additional details!

Preheat your oven to 450º Wash and dry your peppers then slice in half and de-seed. Line a baking sheet and place peppers cut side down and roast for 45-50 minutes or until the peppers’ skin is blackened and blistered. 

Immediately transfer the still-hot peppers to a bowl and cover with a towel. Let cool. Remove the blistered skin from each pepper and toss into a food processor. Process until smooth. You could be finished at this step if you like, but if you plan on using the red pepper purée in pasta dough, it needs to have a uniform texture. 

Pass the purée through a sieve or a food mill to remove any chunks, missed seeds, or skin that didn’t peel off. Transfer to an airtight container and store in the fridge for about five days or freeze in ice cube trays for up to four months!
