Spiced Carrot Cake Overnight Oats

Springtime and carrots go hand in hand, and while I would LOVE to eat carrot cake for breakfast every day, I know that my body would be very displeased. I’ve learned that super-sweet breakfasts aren’t my friend when it comes to focusing later in the day! I need a substantial breakfast that has plenty of protein in the morning- so, I’ve bridged the gap!

These Spiced Carrot Cake Overnight Oats have all the best bits of carrot cake in them, spices, ginger, sweet carrots, but I’ve added extra goodness too! With milk and yogurt, we add protein plus plenty of fiber with rolled oats, chia, and flax. I also love that you can make these vegan if you’d like- they’re great made with oat milk and oat yogurt too (you can even stick with the same proportions!)

Spiced Carrot Cake Overnight Oats Ingredients

(Per Pint Jar)
½ Cup Rolled Oats
½ Cup Milk of Choice
¼ Cup Yogurt of Choice
¼ Cup Shredded Carrots
1 Tbsp Candied Ginger, Finely Chopped
1 Tbsp Chia Seeds
1 ½ Tsp Maple Syrup (add or reduce to taste)
1 ½ Tsp Cinnamon
1 Tsp Flax Seeds
½ Tsp Nutmeg
Pinch of Salt
Optional: ¼ Cup Walnuts, Cashews, Pecans

Spiced Carrot Cake Overnight Oats Method

There are two ways of going about making overnight oats and the only real difference is the amount of dishes we’re making and how much shaking you want to do!

If you want a perfectly mixed overnight oat jar, add the milk, yogurt, shredded carrots, and maple syrup into a bowl and mix until the mixture is combined well (no lumps) then stir in the remaining ingredients and mix again.

Then we’d transfer to jars, add a lid, and pop in the fridge overnight.

However, most of the time I want nothing to do with creating extra dishes with a mixing bowl!

If you want to make the oats in the jar add all of the dry ingredients, shake to combine. Then add the milk, shake well, then the yogurt, shake well, then the carrots and maple syrup, then shake the jar ferociously to combine everything!

Once your jar is mixed (using either method) secure the lid and pop into a refrigerator overnight. The oats will have soaked up the liquid and created a creamy, incredibly tasty breakfast with some crunch from the seeds and nuts!

  • 1/2 Cup Rolled Oats
  • 1/2 Cup Milk Can sub for milk of choice.
  • 1/4 Cup Yogurt Can sub for yogurt of choice.
  • 1/4 Cup Shredded Carrots
  • 1 Tbsp Candied Ginger Finely Chopped

  • 1 1/2 Tsp Maple Syrup Can adjust for sweetness.
  • 1 1/2 Tsp Cinnamon
  • 1 Tsp Flax Seeds
  • 1/2 Tsp Nutmeg
  • Pinch Sea Salt
  • 1/4 Cup Nuts of Choice Optional

Instructions
