Parsnip Fries

I get asked a lot what my favorite season for produce is, and honestly winter and early spring would be last on the list. However, I’ve recently fallen in absolute love with parsnips!  I used them in Cooking Mindfully, and as I’ve played with them in the kitchen more and more I realized how versatile they are! Roasted, blended, pickled– they’re great in all the ways! My favorite snack recently is a bowl of parsnip fries!

They’re SO easy to make and the flavor and crunch of them is beyond delicious! So, even though spring is starting to show up outside I’ll be sticking to my new favorite winter root veggie for as long as they are in season! Parsnip Fries Ingredients

Two Large Parsnips
Drizzle of Olive Oil
1 Tbs Parsley, Minced
1 Tsp Garlic Powder
½ Tsp Black Pepper
Pinch of Finishing Salt

*Note: This ‘recipe’ is more cooking time than an actual recipe- so feel free to have so much fun playing with what you might like as a flavor profile! Parsnip fries are incredibly forgiving, so feel free to switch out the parsley and garlic for what you like! Paprika and thyme? Delicious. Cilantro and citrus salt? So great! Rosemary and black pepper? Perfect!

Parsnip Fries Method

 Preheat the oven to 425ºF

Remember parsnips are a root vegetable and they happen to have a lot of lines and divots so give them a good scrub! Then peel them (I use this peeler with a replaceable blade!) and then top and tail them.

I prefer my fries to be relatively uniform matchsticks, but you can make these as thick or thin, long or short as you’d like. (Just remember for thicker fries you’ll need to add cooking time!)

Pop the cut parsnip fries into a bowl and drizzle with the olive oil, pepper, and garlic powder. Toss well to combine, so that every piece is coated with the oil- this makes for a crispier fry!

Pour onto a lined baking sheet in a single layer and pop into the oven for 25-30 minutes, tossing halfway through until the fries are golden brown and crisp!

Sprinkle with finishing salt and parsley and serve warm!

Ingredients
  

  • 2 Parsnips Large
  • 1 Tbsp Parsley Minced
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Black Pepper
  • Finishing Salt
  • Drizzle Olive Oil

  • Wash, peel, and then top and tail each root. Cut into matchsticks.
