High Protein Blended Beet Toast

I love when a simple recipe change creates something stunning and delicious. I am a big fan of loaded toasts for breakfast- pile some protein, healthy fats, and greens on top of a carb and I am guaranteed to like it- the millennial in me loves a good avocado toast! One of my favorite things lately is a toast topped with cottage cheese. It is savory and chock full of protein, but I’m always looking for wakes to make it just a bit more exciting. Enter my High Protein Blended Beet Toast! It is perfect for being festive in February (just like my beet bread!) and full of earthy flavor.

The great thing about this ‘recipe’ is that it isn’t quite an actual recipe- more a guideline. You can easily alter how earthy the beet toast is by adding more or fewer beets as well as adding seasonings of your choice! You can even swap out the microgreens for actual greens if you’re looking for a more salad-type breakfast! Plus, low on time or don’t want to add to the dishwashing pile? Swap out the piping bag for a spoon!

High Protein Blended Beet Toast Ingredients

1 Cup Cottage Cheese
½ Cup Roasted Beets*
1 Tsp Seasoning (I used a mixture of equal parts powdered thyme, basil, and rosemary.)
Salt and Pepper, to taste
*If you are roasting beets you’ll need a drizzle of oil

Optional: Beet Microgreens

High Protein Blended Beet Toast Method

If you already have roasted beets, you’re good to go! I usually make this toast with leftover beets from meal prep. However, if you haven’t roasted beets- here is my favorite way for tender beets!

Preheat the oven to 375º F. Normally I roast things between 400º to 425º but that creates a crust on the outside, that while delicious, will clog up a piping bag or give you crunchy bits in an otherwise smooth mixture.

Chop the beets into inch-long sections, drizzle with oil (I love avocado oil for its higher smoke point) and toss well.

Roast in the oven for 40 minutes, stirring to toss at the halfway point. Wait for them to cool completely before use.

For the Blended Beet Toast:

In a food processor combine cottage cheese, roasted beets, and seasoning. Blend until completely smooth- it takes me about three minutes.

You can use a spoon to spread, but if you’re piping the mixture, add to a reusable piping bag with a round piping tip.

Toast your bread slices, then pipe the mixture onto the bread slices. Top with beet microgreens!

Simple, beautiful and full of great nutrition- you can’t go wrong with a loaded high protein blended beet toast!

Ingredients
  

  • 1 Cup Cottage Cheese
  • 1/2 Cup Roasted Beets* If you are roasting your own beets you'll need a drizzle of olive oil.

  • Salt and Pepper to taste
  • Microgreens Optional

Instructions
 

  • If you need to roast beets: Preheatthe oven to 375º F
