Summer Drink Series: Tequila Spiked Watermelon Agua Fresca
Watermelon is everywhere in summertime. It’s cool, refreshing, and looks wonderful in Instagram pictures (I know I’m not the only one who might have purchased food for a snapshot!) So I knew that I had to incorporate it into at least one cocktail this season! This Tequila Spiked Watermelon Agua Fresca is equal parts delicious and perfectly cool for a summertime poolside cocktail!
The whole process from chopping to blending to pouring takes under ten minutes! You can’t beat that when running outside to your chaise lounge. Also, I know this recipe is for the alcohol fan, but it is equally as tasty if you for-go the tequila! Refreshing without the kick! For an added cool-factor, plan ahead and pop some watermelon chunks in the freezer for ice that won’t water down your cocktails!
Ingredients:
6 Cups Fresh Watermelon
½ Cup Lime Juice (About 2 large limes)
Handful of Mint
3 Ounces of Tequila (My favorite is Don Julio)
Instructions:
1 Remove watermelon flesh from the rind and roughly chop into cubes. You can save the rinds for compost or pickling later! Note: I used a seedless watermelon, if you don’t have one make sure to remove the black seeds before using the blender!
2 Juice the limes. Make sure to save a few limes for garnish later!
3 Remove mint leaves from stalks- the amount of mint is up to you! I’m a mint fiend so the more the merrier in my mind.
4 Optional: Add tequila in now!
5 Blend everything together until it is well combined and the mint is in tiny flakes.
6 Strain into your serving vessel of choice, add ice or frozen watermelon chunks, garnish with lime and mint, then enjoy!
