To say that I am a fry person is an understatement. I love them in every way shape and form- curly fries, truffle fries, cheese fries? Check, check, and check. But sometimes I know I need to satisfy my fry craving without the actual ‘frying in grease’ bit. So, these Herbed Baked Sweet Potato Fries came to be! Super tasty, with a sweetness that is balanced out by fresh herbs, and baked instead of fried, can’t get better than that!
Plus, this recipe is so much simpler than traditional fries. You don’t have to deal with grease splatter or constantly monitoring a temperature. Just chop, bake, and mix and you are on your way to fry-heaven!
Ingredients:
1-2 Large Sweet Potatoes
3 Tablespoons Parsley, Roughly Chopped
2 Tablespoons Chives, Roughly Chopped
2 Tablespoons Grated Parmesan
1 Tablespoon Olive Oil
1 Garlic Clove, Minced
Salt and Pepper, to taste
Instructions:
1- Preheat your oven to 450 degrees.
2- Thoroughly wash your potatoes- I use organic potatoes because I love the texture that leaving the skin on lends to these fries and no nasty chemical for me please!
3- Slice the potatoes into uniform slices (mine are about 1/4 inch) and then slice those medallions into strips (aka your fries!)
4- Place on a baking sheet lined with parchment paper and season with olive oil and salt and pepper.
5- Pop into the oven for 20-25 minutes, depending on how crispy you like your fries.
6- Toss the fries halfway through the baking time to evenly bake.
7- Meanwhile, toss parsley, chives, garlic, and parmesan in a bowl large enough for your fries.
8- While still hot, mix fries into the herb mixture and enjoy!
These fries are so simple and take a total of 30 minutes to prep and cook- perfect to toss in the oven as a side dish for your favorite Meatless Monday meal (I’m picturing a portobello burger!)
