Hello Darlings!
Mardi Gras, literal translation Fat Tuesday, is a day on which gluttony is exalted and enjoyed- my kind of day. I love food in general, but Cajun cuisine has a special place on my palate, flavorful and chock full of seafood, I can’t get enough. In the United States, New Orleans is synonymous with Mardi Gras, Bourbon street, and beads; so what a better way to celebrate a day of eating than with my spin on a traditional New Orleans dish? Jambalaya.
Ingredients:
1 Pound (2 Links) Sausage, Diced (Traditionally Andouille)
1/2 Pound Shrimp, Tails Removed
2 Cups Long Grain Rice
4 Tomatoes, deseeded and chopped
1 Green Bell Pepper, Diced
2 Small Onions, Diced
2 Cups Celery, Diced
2 Cups Chicken Stock
5 Cloves Garlic, Minced
2 Tablespoons Chopped Parsley
1 Tablespoon Each: Oregano, Basil, Thyme, Paprika
1-3 Teaspoons Cayenne Pepper (depends on how spicy you like your food)
1 Tablespoon Butter
Salt and Pepper to Taste
Instructions:
1. In a large saucepan melt the butter. Add sausage, bell pepper, onion, celery, and garlic. Sauté until sausage starts to brown, 5-8 minutes.
2. Add all spices, rice, tomatoes, and chicken broth. Bring to a boil and let simmer 20 minutes, stirring occasionally.
3. Add shrimp and parsley, let simmer 5 more minutes.
Serve hot and enjoy your Mardi Gras meal!
