To say that I’m addicted to Italian food is a little bit of an understatement. I love it. I love the carbs, the sauces, the fresh herbs, the time intensive nature of making a fresh batch of pasta from scratch, and the very satisfying moment when you roll out perfect sheets of lasagna noodles. However, when you own a business, are yoga instructor, have a life, and write a blog, making a from-scratch dinner every night is just not going to happen.
So, to make sure I still get the wonderful feeling of having a home-cooked meal even when I am very short on time I pull something out of the fridge or the freezer. If you’ve been reading MHH for a while, you may have noticed that every once in a while I massively meal prep for crazy busy weeks ahead, I also tend to have a freezer full of ready meals with simple, clean ingredients. Michael Angelo’s Signature line fits that bill perfectly.
One of my favorite Michael Angelo’s meals is their Eggplant Parmesan. The tasty eggplant is battered with the perfect amount of breading (too little is no fun and too much throws off the texture!) topped with fresh tomato sauce and then sprinkled with three different types of cheeses. It is delicious, and only takes seconds to prep.
There are instructions for both a microwave oven and a conventional oven on the box. The microwave takes only minutes, but I take a hippie stance on microwaves and don’t own one, so my meal took a grand total of only 35 minutes from start to finish. Now that 35 minute wait can give you a bit of time to catch up on email or make a great side to enjoy! This particular dinner involved slathering a crusty baguette with my basil-infused olive oil, but often I grab a serving of my sautéed mushroom and shallot brussels sprouts to kick up my veggie intake. Total of actual prep time? Fewer than five minutes- yes, please.
These Italian meals that can be found in the frozen aisle are a step up from what many might think to be a ‘typical’ meal you pull out of the freezer. Michael Angelo’s signature line, which not only includes the Eggplant Parmesan, but also Shrimp Scampi and Lasagna with Meat Sauce, don’t contain any or artificial ingredients. Nothing you don’t want coming near your body- just great taste and convenience.
