Superfood Green Smoothie… it sounds, healthy. Now I am definitely in the boat of ‘most green smoothies taste like grass,’ however, this one- chock full of mint and pineapple? Not so much. Full of natural sweetness and the refreshing taste of mint, this smoothie is on the sweeter side without loosing all the natural goodness of the greens. And it is seriously green- the added boost of chlorophyll-heavy spirulina sees to that.
And with St. Patrick’s Day and the first day of spring right around the corner we are all clamoring for a little bit more green. So, pop open your cabinets and clean the dust off your blender and get ready for breakfast or a wonderful mid-day treat.
Ingredients: (Makes about 1 Quart)
2 Cups Spinach Leaves
2 Cups Almond Milk
1 Cup Frozen Pineapple
1/2 Cup Mint Leaves
2 Tablespoons Chia Seeds (plus more for garnish)
1 Teaspoon Spirulina Powder
Drizzle of Honey (optional)
1- Prep your greens by removing stems, if desired.
2- Add all ingredients into a blender, and blend on high until the consistency is smooth.
3- Top with reserved chia seeds and mint leaves and enjoy!
Superfood is a term tossed around pretty willy nilly nowadays, but I believe that this smoothie fits the bill. Not only do you get the nutrients from vitamin K and iron rich spinach, but you’re adding in the plethora of nutrients in spirulina- chlorophyll to help rid the body of toxins, multiple variants of vitamin B, potassium, magnesium, and a higher concentration of calcium than milk!
Add the fiber of chia seeds, digestion promoting mint, and the allergy-fighting local honey into the mix and you really can’t go wrong with any of the ingredients in this very festive drink!
