The cookbook has tons of recipes for vegan cookies and ice cream everything from carrot cake to chocolate to chai (which is my favorite thus far!). Each recipe is easy to follow and pairs a cookie with an ice cream flavor incredibly well.
Now, no birthday is complete without ice cream. And as a treat to myself (and the fact that Williams and Sonoma was having a 55% off sale!) I bought myself an ice cream maker for my birthday- and now I’m obsessed! I love that I can make healthier versions of ice cream- with almond milk YUM- at home and pretty much on a whim (minus the 24 hour freezing period) so I have been playing with making my own recipes but adoring the ones in my Vegan Ice Cream Sandwiches cookbook!
As much as I hate to admit it when I first thought vegan ice cream I cringed a bit. I love me some full-fat ice cream full of cream, and I thought the vegan versions wouldn’t have the same consistency. However with awesome recipe tweaks that include adding ¼ teaspoons of guar gum and the like you get an amazing result full of flavor and great texture!
